આ રીતે બનાવશો તો એકદમ સોફ્ટ અને
ટેસ્ટી બનશે દાળવડા
શિયાળો હોય
કે ચોમાસુ, ગુજરાતીઓ
દાળવડા ખાવાનું બહાનુ જ શોધતા હોય છે. સારા મૂડમાં રોડ સાઈડ નાસ્તો કરવાનું મન થાય
તો ગુજરાતીઓના મોઢામાં પહેલુ નામ દાળવડાનું જ આવે. ઘરે પણ આદુવાળી ચા કે લીલી ચટણી
સાથે દાળવડા ખાવાની મજા પડી જાય. ઘરે પણ તમે સોફ્ટ અને ટેસ્ટી દાળવડા બનાવવા
માંગતા હોવ તો આ રહી રેસિપી.
- ü 3 વ્યક્તિ માટે દાળવડા બનાવવા માટે તમારે અંદાજે નીચે મુજબની સામગ્રી જોઈશે
- ü 1 કપ મગની દાળ (તમે અડધો કપ મગની દાળ અને અડધો કપ અડદની દાળ પણ લઈ શકો).
- ü 1 કે 2 લીલા મરચા.
- ü અડધા ઈંચ જેટલુ આદુ ઝીણુ સમારેલુ.
- ü ચપટી હીંગ.
- ü 1 મોટી ચમચી મરી.
- ü 1 મોટી ચમચી ધાણા.
- ü જરૂર પ્રમાણે પાણી.
- ü સ્વાદાનુસાર નમક.
- ü તળવા માટે તેલ.
કેટલો સમય પલાળવી દાળ?
મગની દાળના
વડા બનાવવા હોય તો ઓછામાં ઓછા ત્રણથી ચાર કલાક દાળ પલાળવી. પણ અડદની દાળને વધુ સમય
લાગે છે. આથી અડદની દાળ હોય તો પાંચથી છ કલાક કે આખી રાત દાળ પલાળી રાખવી.
ખીરુ બનાવવાની રીતઃ
દાળ પલળી
જાય પછી ગ્રાઈન્ડરમાં નાંખીને દાળને પીસી નાંખો. તેમાં સમારેલા મરચા, આદુ, હીંગ
નાંખી મિક્સ કરો. વધુ પાણી ઉમેરી ફરી તેને મુલાયમ પેસ્ટ બને ત્યાં સુધી ગ્રાઈન્ડ
કરો. જરૂર પડે તો વધારે પાણી ઉમેરો.
આ રીતે ઉમેરો મરી અને ધાણાઃ
ધાણા અને
મરીને સીધા ખીરામાં ઉમેરવાને બદલે અધકચરા ક્રશ કરીને અથવા તો ખલમાં વાટીને નાંખો.
આમ કરવાથી ફ્લેવર વધુ સારી આવશે. ત્યાર પછી ખીરામાં મીઠુ ઉમેરી થોડી મિનિટ સુધી
ખીરુ બરાબર હલાવો.
તળવાની રીતઃ
દાળવડા
તળવા માટે એક કડાઈ કે પેનમાં તેલ લઈને ગરમ કરો. તેમાં ચમચીમાં આવે તેટલુ ખીરુ લઈને
એક પછી એક ખીરામાં નાંખતા જાવ અને તે સહેજ ક્રિસ્પી અને ગોલ્ડન થાય ત્યાં સુધી
તેને તળો. દાળવડા સોનેરી રંગના થાય એટલે તેને કાઢી લો. ગરમાગરમ દાળવડા લીલી ચટણી, આમલીની ચટણી કે ટોમેટો કેચઅપ
સાથે સર્વ કરો.
Gujarati Dalwada is a famous tea time snack made especially during the rains. Gujarati Dalwada has its origin in Ahmedabad Gujarat where it is available at tea joints, public stations, etc. It is made from Split Green Lentils and Split Yellow Lentils and small amounts of dehusked black lentil and rice along with spices. In other parts of India the Dalwada or Dalvada are made using different lentils like Bengal gram (Chana Dal Vada) or deshusked black lentils (urad dal Medu Vada). For making Dalwada, lentils are soaked and then coarsely grounded together and then spices are added and then small fritters / vadas are made using hand or spoon and it is deep fried in hot oil. Dalwada are served hot with onions, deep fried cut green chillies and chutney. Though it is deep fried the lentils do make it a healthy snack option. Do make this wonderful snack this monsoon!
INGREDIENTS:
1/3 Cup
Split Green Gram (Moong ki Chilkewali Dal)
1/3 Cup
Split Yellow Lentils (Moong Dal)
1/2 Tbsp
Split and deshusked Black Gram (Urad Dal)
1 Tbsp
Rice
2 Tbsp
Water
1/4 Tsp
Asafoetida (Hing)
1/4 Tsp
Black Pepper Powder (coarsely grounded)
1 Tbsp
Hot Oil
Salt to taste
Pinch Baking Soda (Meetha
Soda)
1/2 Tsp
Grated Ginger
1/2 Tsp
Grated Garlic (Optional)
1 or 2 finely chopped Green Chillies
2 Tbsp
finely chopped Coriander Leaves
SERVES: Makes
about 275 gm Daalwada (2-3 people)

METHOD:
1. Wash
the lentils and rice together for 3-4 times and then soak
in lots of water for 6-8 hours.
2. After 8 hours drain the water and grind to a coarse mixture. Use about
2 Tbsp Water if required. Ensure NOT to grind to a fine
paste.
3. Take
the mixture in a big bowl.
4. Add
Asafoetida (Hing), Black Pepper Powder, Hot Oil, Salt and Baking Soda and Mix
everything well.
5. Add
Grated Ginger, Grated Garlic (optional), finely chopped Green Chillies, finely
chopped Coriander Leaves. Mix everything well for 1-2 min
so that batter becomes light and fluffy.
6. Heat
oil for frying in a pan / kadai and once hot reduce flame to low.
7. Put
small Vadas in oil using your hand. You may also use a spoon.
8. Fry
each batch on low-med flame for 4-5 min till light golden
colour.
9. Once
Dalwada are light golden colour take them out on a paper napkin.
10. Hot
Dalwada are ready to eat. Serve with fried Green Chillies, Onions and coriander
chutney / ketchup.
TIPS:
1. Do not
hurry up frying Dalwada or else they will remain undercooked from inside.
2. Dalwada
tastes best with fried Green Chillies. To make it fry some cut Green Chillies
in hot oil for 1-2 min only till its colour change
slightly. Once Chillies are done take it out on paper napkin and sprinkle some
salt over it.
